Lamb Medallions with Garlic and Rosemary 2 servings Ingredients: 4 lamb medallions 2 cloves of garlic minced Rosemary Sea salt Black pepper Zest of ½ lemon Olive oil How to prepare: Mix the garlic, rosemary, salt, pepper, lemon zest and olive oil in a bowl to create a marinade Cover the lamb medallions completely with marinade and let them rest with the marinade in the fridge for at least 1 hour (longer is better) Heat a pan and sear the lamb medallions in about 6-8 minutes Rest the lamb chops on a plate covered in tin foil for 5 minutes before serving
