Lamb Medallions with Garlic and Rosemary


  • 4 lamb medallions
  • 2 cloves of garlic minced
  • Rosemary
  • Sea salt
  • Black pepper
  • Zest of ½ lemon
  • Olive oil

How to prepare:

  1. Mix the garlic, rosemary, salt, pepper, lemon zest and olive oil in a bowl to create a marinade
  2. Cover the lamb medallions completely with marinade and let them rest with the marinade in the fridge for at least 1 hour (longer is better)
  3. Heat a pan and sear the lamb medallions in about 6-8 minutes
  4. Rest the lamb chops on a plate covered in tin foil for 5 minutes before serving
